One of my favourite breakfast foods is sadha roti (like pita bread) stuffed with sliced potatoes that have been fried with onion, garlic, and saltfish. mmmmmmm.

I started following your blog a little while back and am riveted by both the affectionate food stories and the Klezmer music scene. Tok fozelek, lecso cooked in many ways: plain, with eggs or sausages and rice, stuffed peppers, cold fruit soups, vegetable soups from green beans, kohlrabi, fresh peas, etc. Hurka, kocsonya and stuffed cabbage are def'ly winter foods.Unknownhttps://www.blogger.com/profile/13209561133131248930noreply@blogger.comtag:blogger.com,1999:blog-21879466.post-33402150421050004692009-08-26T23:27:14.313-04:002009-08-26T23:27:14.313-04:00"Hungary doesn’t really have anything approac..."Hungary doesn’t really have anything approaching a “summer cuisine.”"
I was just making that same complaint last Friday while tucking into a bowl of hot Szegedi fish soup for lunch in Komarom, not having found anything cold on the menu. And I don't like carp, either.
A thousand years of living in this climate and the only summer dish the Magyars can come up with is cold fruit soup. A fine dish (with inescapable echoes of Kool-Aid) but hardly adequate.
When is someone going to introduce a vegetable-eating gene into the local DNA?

As for sardines, they can also be got cheap (I forget how cheap) at the fish stall downstairs at the Big Market Hall (Nagyvasarcsarnok.) Unfrozen octopus and other cephalopods, too, for those who know how to cook them.Unknownhttps://www.blogger.com/profile/05388229843048867922noreply@blogger.comtag:blogger.com,1999:blog-21879466.post-5818084566642525402009-08-26T04:25:32.893-04:002009-08-26T04:25:32.893-04:00The smell of saba (mackeral) cooking is almost as ...The smell of saba (mackeral) cooking is almost as enticing to me as the smell of bacon, although I prefer saba in the evening (with sake) and bacon in the morning (with coffee).Joelhttps://www.blogger.com/profile/14862310351171403117noreply@blogger.comtag:blogger.com,1999:blog-21879466.post-1062904719507872462009-08-23T11:35:05.725-04:002009-08-23T11:35:05.725-04:00There is a place in the old Jewish quarter of Rome...There is a place in the old Jewish quarter of Rome that has wonderful battered and fried Baccala.
